That is software dependent. If your application allow you to choose your microphone input source and audio output source, then yes, Most audio, video, streaming or meeting applications allow this, but you should check.

Yes this Saramonic R=SR- ULM10 mic will work if your mac has type A or type C usb, if your mac has type C usb get yourself a type A female to type C male adapter..

Yes, this will be a good choice. Because it has a longer cable, it allows you to have more freedom of movement.
