Will this cable split the left and right channels of a stereo output or is it the same signal coming out of both XLRs?
This cable is a breakout cable, which splits the stereo signal into mono L & R outputs. A Y cable would duplicate the signal into 2 identical outputs. Best regards, Hosa Support.

Not sure. I ASSUMED 2 channel, but I didn't do anything to test that assumption.

how long is the length of cable from the XLR connectors to where they meet?
Took a little time to find the cable as it was installed into a system, but checking it out without connectors, and no strain relief, wire only, its 10 feet long.

If this is used with a pair of mics, will the recorded signal from each be blended, or will the two signals be hard panned left and right?
Never tried it. I've always used these for getting stereo output from an iPad or iPod into a console. Sorry I couldn't answer your question.
